A Simple, NURISHING & Delicious Breakfast
This recipe for a chia seed pudding is a fantastic way to start your day! Chia seeds are tiny but mighty, packed with essential nutrients that offer a range of health benefits. Recipe (serves 1)
½ cup coconut milk
1/8 teaspoon vanilla extract
1 soaked Medjool date, pitted
2 tablespoons chia seeds
Optional: Raw honey or maple syrup to taste
Instructions
Blend the Base - Combine the coconut milk, vanilla extract, and soaked Medjool date in a blender. Blend until smooth and creamy.
Add the Chia Seeds - Stir the chia seeds into the blended mixture.
Chill and Set - Pour the mixture into a jar or bowl and refrigerate for at least 4 hours, or overnight. The chia seeds will absorb the liquid and create a pudding-like texture.
