Chia Seed Pudding

A Simple, NURISHING & Delicious Breakfast


This recipe for a chia seed pudding is a fantastic way to start your day! Chia seeds are tiny but mighty, packed with essential nutrients that offer a range of health benefits. They are an excellent source of fiber, omega-3 fatty acids, protein, and antioxidants. These little seeds can aid in digestion, support heart health, regulate blood sugar levels, and promote overall well-being.



Recipe (serves 1)


  • ½ cup coconut milk

  • 1/8 teaspoon vanilla extract

  • 1 soaked Medjool date, pitted

  • 2 tablespoons chia seeds

  • Optional: Raw honey or maple syrup to taste



Instructions


  1. Blend the Base - Combine the coconut milk, vanilla extract, and soaked Medjool date in a blender. Blend until smooth and creamy.

  2. Add the Chia Seeds - Stir the chia seeds into the blended mixture.

  3. Chill and Set - Pour the mixture into a jar or bowl and refrigerate for at least 4 hours, or overnight. The chia seeds will absorb the liquid and create a pudding-like texture.

  4. Serve - Top with fresh fruit and a sprinkle of Nurish Granola, to add extra flavour and texture.



Tips


  • Soaking the Date - Soaking the date helps to soften it and makes it easier to blend.

  • Customizing Flavours - Experiment with different flavour combinations by adding fruits, spices, or other sweeteners to your liking.

  • Texture - Adjust the consistency by adding more liquid or chia seeds.

  • Storage - Store any leftover pudding in the refrigerator for up to 3 days.
