Chia seed pudding



Serves 1


· ½ cup coconut milk

· 1/8 tsp vanilla extract

· 1 soaked medjool date (pitted)

· 2 tablespoons chia seeds

· Optional - Raw honey or sweetener of your choice



Blend all ingredients except chia seeds and pour into a jar/cup. Stir in the chia seeds & leave to set in fridge for 4 hours or overnight. Top with Nurish granola!
